Miso Vegan Power Bowl


To be honest, when we first came across this recipe we were skeptical. We really didn’t think it would taste good, and were super hesitant to try it. Obviously, it ended up being one of our favourite vegan dishes! This super healthy power bowl takes 30 minutes to create, so it’s the perfect dish to make on a weekday night. 


MISO VEGAN POWER BOWL

Ingredients

Noodles

  • Soba Noodles (we used 250g for 2 people). These are also called buckwheat noodles.

  • 2 heads of Shanghai bok choy

  • 1 head of broccoli

  • 1 avocado

  • 1/2 lime

  • 2 tablespoons of sirracha

  • 1 1/2 tablespoons of soy sauce

  • 1 tablespoon of sesame oil

  • 1 tablespoon of cooking oil

  • 2 teaspoons of paprika 

  • handful of chopped cashews

  • green onion for garnish

  • sesame seeds for garnish

The Dressing

  • 2 cloves of garlic, minced

  • 3 tablespoons of tahini

  • 2 tablespoons of miso

  • 1 1/2 tablespoons of soy sauce

  • Juice from 1/2 lime

  • 1 tablespoon of sesame oil


Instructions

Noodles

  1. Set oven to 220 C

  2. Cut broccoli florets into smaller pieces, and toss them in cooking oil and paprika. Roast in oven for 15 minutes.

  3. Add the soba noodles to boiling water for 5 minutes. While the noodles are boiling, chop the bok choy.

  4. Drain the noodles and place them back into the pot. Add the bok choy, sesame seed oil and soy sauce, and stir.

The Dressing

  1. In a small bowl, combine all of the ingredients together. It should be of a creamy consistency. If it is too thick, add water.

Put it all together!

  1. Once the broccoli is done, place them on a plate and sprinkle sesame seeds and sriracha sauce on top.

  2. Place the noodles in the bowl, adding the dressing on top. Garnish with green onion and cashew nuts. Add half an avocado on the side, and serve with 1/4 of the lime wedge.
